our Destilation

At our palenque, we believe that the highest quality mezcal is not rushed—it is accompanied. Everything begins with magueys selected for their size and maturity, after six to eight years of absorbing the flavors of Oaxaca’s Sierra Sur. Harvested with precise jima to keep only what’s essential—the heart of the agave—this process helps avoid green or bitter notes and ensures uniform cooking.
