We distill calmly, making careful
cuts to keep only the “heart” of the mezcal: clean, fragrant, and lasting. Two distillations are carried out to refine aromas and texture.
The first distillation is done in a copper still, and through a careful process, the vapor from the fermented mash is condensed to obtain the liquid of the first distillation. This liquid, also known as “ordinario,” is used for the second distillation, which yields the mezcal.
The liquid from the second distillation is separated into three parts: the heads and tails are removed, leaving only the heart of the mezcal—the central part that expresses the maguey clearly, prioritizing aroma, balance, and a clean finish, so the mezcal is fragrant, long, silky, and without harshness.
